StronGeR

(Semi-)mobile slaughtering for poultry and cattle

Objectives

The StronGeR project aims to evaluate and optimize (semi-)mobile slaughtering for poultry and cattle. Various types of (semi-)mobile slaughtering will be analyzed regarding their impact on the animals, organizational feasibility, economics, hygiene, and the meat quality of the carcasses. Existing and new scientific findings for optimizing these aspects will be tested for their suitability and applied in practice. The project examines aspects such as animal welfare, meat and environmental hygiene, microbiological, sensory, and physicochemical meat quality, compliance with European and national regulations, as well as technology, practicality, and economics. The goal is to identify practical deficiencies and implement optimizations.
